Can you please explain how to recovery information on chip stakes from a tournament that interrupted by a system crash yesterday?

There are hand history files in your data folder. When you restart the poker software the default crash recovery system will credit the remaining players with an equal portion of the remaining prize pool.

Can you please confirm that the hand histories would be saved in real time. Therefore, if the tournament is interrupted for any reason the hand history will still be there no matter what.

The last completed hand at each table will certainly be there. Hands in progress at the time may have incomplete data.
