I am upgrading my EC2 Mavens instance from Windows Server 2019 to Windows Server 2022 and figured I'd switch to 64-bit Poker Mavens. Should copying the data folder over to the new installation work in this scenario?

Yes, there are no differences in the data folders of 32-bit installs and 64-bit installs.
