If I have a 5 player tournament where players buy in for $10 and the prize is 1 Funded Ticket (valued at $50) that will be used for a different tournament, what do I do with the payout table to make sure the tournament isn't also paying out $$ to the winner?

Make it a 0+10 buy-in (0 buy-in + 10 entry fee). That makes a 0 prize pool and the house keeps the 10.
