Why do little to remove the copyright on the link using the updated version of gold?

If you are asking how to remove it, there are three new settings in the Gold version located in the Client Settings group:

Remove About dialog: Select Yes to remove the Help|About dialog in the player client that displays the Poker Mavens copyright message.

Background logo: Enter the full path of a local image file (GIF, PNG, JPG, or SWF format) to use as the background logo. Leave this value blank to use the default Poker Mavens logo or enter "none" for no graphic.

Background logo link: Enter an optional URL (beginning with http://) of a target web page to display in a popup window when a player clicks your background logo.

is there a chance when update patch or shutdown server where this value(background logo) SWITCHES BACK to default pokermavens logo? speaking of unwanted branding error and security.

The only scenario where that would happen is if you manually uninstalled the software, which would delete the Windows registry key that holds all of the System settings. When applying an upgrade patch, always install the new version right over the older version to keep all existing settings. An unplanned shutdown of the server would have no effect on system settings. They are read in when the server starts and only modified when you specifically make a change to a setting.
